Vegan Meal Plan

It is the day before the Vegan Challenge, and honestly…I am so excited. Change normally drives some to the point of being anxious and afraid. Afraid of the unknown, maybe ? but I am in desperate need of a change in my diet and lifestyle. There’s a time and place for everything, and like Garth from Cape Town Vegan said “small changes” The response to the post I published on Friday was amazing! with over 250 views, its definitely one of my top posts so far in 2018. Thank you for all the messages of encouragement and to those jumping on board this Vegan ride, I say “Let’s do this”

Garth has written a meal plan for me; and it goes a little something like this:

Monday

Breakfast

Oatmeal (Porridge) w/Bananas and Pumpkin/Sunflower/Chia Seeds (or all three!) for some extra protein

Lunch

Hummus, Tomato & Sprouts in Pita

Dinner

Daily Dish :Garlic Chilli Tofu

OR

Stir-Fried Vegetables, Rice & Tofu with Mustard Peanut Sauce & Four Bean Salad

Tuesday

Breakfast

– Fruit Smoothie and Toast with Marmite (white or brown bread – most breads are vegan)

Lunch

Woolworths Beetroot and Falafel Wrap

Dinner

Daily Dish: QuickCashew Lentils

Wednesday

Breakfast

Granola w/plant-based milk of your choice

Lunch

Vegan Cheese Toastie w/Crisps – buy Nature & Moi (vegan) Cheese from Checkers

Dinner

Daily Dish: Aubergine Tabbouleh

OR

Red Bean Burritos

Thursday

Breakfast

Avocado, Tomato and Marmite on Toast

Lunch

Chickpea Salad

Dinner

Daily Dish: Mushroom Bean Wrap

Vegan Sausage and Mash

Friday

Breakfast

Vegan Yoghurt w/Fruit and Berries
